Smashed Potatoes with Goat Cheese & Parsley

Ingredients
fiber_manual_record¼ cup fresh chopped parsley
fiber_manual_record8 oz (about 1 cup) soft goat's cheese
fiber_manual_record1 tbsp ground black pepper
fiber_manual_record½ cup light butter
fiber_manual_record½ tbsp salt
fiber_manual_record2 lb small Yukon gold potatoes
Instructions
1 - Boil a large pot of water, add the potatoes and let cook until very soft (about 30 minutes).
2 - Drain the water and roughly smash the potatoes together with the butter, salt and pepper.Chop the goat’s cheese into small cubes then toss into the smashed potatoes.
3 - Sprinkle with parsley and serve.
